The test of any
concept, idea or philosophy lies in the scalability of its
application. Mawaid in the Dawoodi Bohra community has passed
the test of the scalability over and over again. The same
concept, ethos and spirit are behind each cooking event whether
at home or at community kitchens.
It is estimated that in a year Mawaid serves millions of people.
The food is cooked in the same way, the serving is done in the
same manner and the people eat in the same style. What changes
is the location.
The Mawaid passes the litmus test with flying colors during
Ashara Mubaraka
(annual community gathering) where over 125,000 people are fed
daily. The same standards are strictly followed, the maximum
waiting time for seating is 30 minutes and once you are at the
thaal, the food is made available in less than 30 seconds.
Regardless of numbers, no compromise is made on the quality or
tradition of cooking, serving or eating (Enjoy some photos
below).
Mawaid has carried out relief programs during times of
disasters. The earthquake in Gujurat, India, was one such
instance where the Mawaid prepared and served people day after
day providing them with good warm food and giving them the hope
of restructuring when nature had taken its toll. Such were the
organization skills of the Mawaid that other NGOs and government
bodies came to look at how so many people could be fed so
quickly and in such a disciplined way. |
